How does it work?
Gluten is a protein found in wheat, barley, rye, while the protein casein is found in dairy products. The body naturally produces the enzymes required to digest food and absorb its nutrients. Factors such as stress, age, and the environment can slow down the body’s natural enzyme production.
When the body doesn’t produce the type or quantity of enzymes required to properly break down food, we can experience symptoms such as gas, bloating, constipation, cramping, and nausea. More serious issues include brain fog, joint pain, skin rashes, headaches and fatigue.
A gluten-and-casein-free diet is one solution, but not foolproof. Inadvertent consumption of gluten or casein can happen daily due to cross-contamination, improper labeling, or eating out.
